Lesson 2 of 3

Shelves, stock and expiry dates

Keep shelves full, neat and safe with simple rules.

3 min +10 points

First in, first out

Put new stock behind old stock, so older items sell first. This is called FIFO: first in, first out.

Check dates

Look at "Use by" and "Best before" dates every week. Remove expired items and tell your supervisor. Never sell expired food or medicine.

Neat shelves

  • Labels and prices facing the customer.
  • Heavy items on low shelves.
  • Fill gaps quickly; empty shelves lose sales.

Count stock

Count fast-selling items daily and tell your supervisor before they run out.
